It seems clear that nutrients separated from food are less well absorbed by the body than when they come as an integral part of a food -e.g. vitamin supplements, or fiber supplements, for example. I suspect the body has a hard time knowing what to do with the haphazard mishmash of different feedstocks in most UPF.
Maybe it’s because the body does not recognize UPF as food, and anything it doesn’t recognize as food gets stored as fat.
